Fairmont opens fourth UK hotel with £125m Cheshire resort

Fairmont Hotels & Resorts has opened a £125 million luxury resort in northwest England, expanding its UK portfolio and signalling continued developer confidence in regional British leisure infrastructure.

Fairmont Hotels & Resorts has opened Fairmont Cheshire, The Mere, following a £125 million (€146.7 million) developer-led transformation of the site. The 116-room property near the market town of Knutsford marks the luxury brand's fourth location in the UK, joining The Savoy, Fairmont Windsor Park and Fairmont St Andrews.

Set within 157 acres of Cheshire countryside overlooking a lake, the five-star resort targets high-end domestic and international tourism. The site previously operated as The Mere Golf Resort & Spa before undergoing its extensive upgrade to meet Fairmont standards.

The accommodation comprises 116 rooms, including 23 suites. Beyond the bedrooms, the resort's commercial model rests on multiple revenue streams, including extensive wellness facilities and a championship-level golf course.

The spa is located in a restored Victorian stable block and features a 20-metre swimming pool, a Finnish barrel sauna, ice baths, hammam steam rooms, salt inhalation chambers, and 20 available treatments. A Technogym with a dedicated weights area and an outdoor class studio are also part of the wellness complex.

Food and beverage operations are fronted by Gordon Ramsay at The Mere, the resort's primary dining venue. The restaurant serves a British-inspired menu featuring the chef's signature beef wellington, with seating options spanning a private dining room, a main restaurant, and an outdoor terrace overlooking the lake. A speakeasy-style bar provides premium drinks and cocktails.

Additional dining venues include The Orangery, which serves British afternoon tea before converting into a champagne and oyster bar in the evenings. The Club Lounge offers a blend of globally inspired dishes and Indian-influenced cuisine, catering to varied culinary preferences without requiring guests to leave the estate.

The resort's 18-hole golf course, originally designed in the 1930s by James Braid and George Duncan, serves as a key draw for the leisure golf market. The parkland course is framed by the lake and surrounding countryside, offering a challenge for various skill levels.

Strategically, the property is positioned 30 minutes by road from Manchester and under an hour from the Peak District. This places a flagship international luxury brand directly in the North West of England. Large-scale luxury hospitality investments have historically been concentrated in London and the South East, making this €146.7 million project a notable deployment of capital into regional British infrastructure.
